Easy Ropa Vieja Recipe con Chipotle

Ropa Vieja means old clothes in Spanish.  The name gives nod to the shredded results of the meat and vegetable as in old rags of clothes. This Cuban dish is pure comfort. Served over rice along with a crusty hunk of bread to soak up every last bit of the amazing sauce.  I did tweak my ropa vieja a bit to add a little Mexican flair with chipotle peppers in adobo.  Enjoy this hearty dish any day of the week with the help from the crock pot.

Add depth to your Ropa Vieja Recipe

Chipotle peppers in adobo add a depth of smoky flavor to any dish. They can be found in the Latin section of your grocery store.  Store leftover chiles in fridge for up to a month or freeze for up to six months.
